Avocado & Grilled Pepper Salad with Rump Steak

This rump steak salad is loaded with protein and fat but is low in carbs. It’s also quick and easy to make.

Ingredients (for 1 person):

Rump Steak (250g)

Steak Seasoning

Avocados (x2)

Red Pepper (x1)

Oregano (to season pepper)

Salad Tomatoes (x2)

Bag of Salad (x1 small)

Olive Oil

Water

Cooking Instructions:

1) Preheat your oven to 200o / Gas Mark 6

2) Slice the red peppers into wide slices and season with a drizzle of oil and oregano

3) Place the peppers on a baking tray (skin side down) and roast for 20 minutes

4) Lightly oil the steak and season (both sides) using the steak seasoning

5) Fry the steak on a medium heat until it is cooked how you like it (rare, medium-rare, well done)

6) Place the salad onto a plate. Slide the tomatoes into 1/4. Cut the avocados into slices. This will make the salad

7) Once the peppers are cooked, mix them into the salad

8) Once the steak is cooked, cut it into slices (see photo) and place on top of the salad

9) Serve and enjoy!
