
Lean Beef Mince & Potatoes with Guacamole & Sour Cream
Ingredients (for 2 meals):
Lean Beef Mince (250g)
2 x Large Potatoes
2 x Red Peppers
1 x Large Onion
1 x Tin of Diced Tomatoes
Beef Stock Pot
1 x Avocado
1 x Lime
Coriander
Sour Cream
Olive Oil
This delicious Mexican inspired dish is cooked using lean beef mince, diced potatoes, tomatoes, onions, home-made guacamole and sour cream. It is very easy to prepare and cook and should take 30-35 minutes in total
Cooking Instructions:
1) Preheat your oven to 220o / Gas Mark 7
2) Slice the potatoes into small 2cm cubes and place on a baking tray with a little oil for 25-30 minutes
3) Finely chop the onion into tiny pieces
4) Chop the red peppers into 1cm pieces
5) Lightly fry the beef with a splash of oil until golden brown (around 5 mins)
6) Once the beef is brown, add the diced onion and peppers to the pan
7) Cook for around 6-8 minutes until the vegetables are soft and the beef is thoroughly cooked
8) Mix the beef stock pot with 100ml of boiling water then add to the pan
9) Add in the tin of chopped tomatoes and mix in well
10) Simmer the entire mix for around 10-15 minutes
11) Whilst the beef and vegetables are simmering, finely chop the coriander (including stalks) into tiny pieces
12) Spoon / scoop the avocado out of the skin, mash and mix it into the coriander until smooth. Squeeze lime juice into the mix. Add salt and pepper if needed
13) Once the potatoes are cooked, place the beef and vegetable mix onto a plate then add the potatoes on top in the centre (see photo)
14) Add the guacamole on top of the potatoes along with a big scoop of sour cream. Sprinkle any remaining coriander on top and serve
