Medium Rare Steak with Salad & Sweet Potato Wedges

Ingredients (for 1 meal):

1 x Rump Steak (250g)

1 x Large Sweet Potato

1 x Bag of Salad

Handful of Cherry Tomatoes

Chilli Flakes

Dried Oregano

Salt and Pepper

Olive Oil

This steak salad is high in iron, zinc, b-vitamins and protein

Cooking Instructions:

Cooking Instructions:

1) Preheat your oven to 220o / Gas Mark 7

2)  Slice the sweet potato into wedges and lightly season with oil and oregano

3) Place the sweet potato wedges in the oven. Roast for 25-30 minutes

4) Half the cherry tomatoes and mix in a tbsp of chilli flakes

5) Lightly fry the steak turning every 1 minute. Season with salt and pepper

6) Once the steak is cooked, cut it into 1cm thick slices

7) Add the salad and cherry tomatoes onto a plate

8) Place the steak on top of the salad

9) Place the cooked wedges to the side of the salad and serve
